Vegan Mallorca Interviews A GoGò Pizzabar

Camilla and Jeronimo / A gogo pizzabar

A GoGò Pizzabar is a vegan friendly pizza bar and takeaway located in the old town of Palma. They serve a wide range of delicious vegan options including a full vegan pizza menu as well as plant-based starters and deserts. We talk to Jerónimo and Camilla, the owners of A GoGò Pizzabar, to hear their story.

Tell us about your A GoGò Pizzabar…

We are a friendly, responsible, inclusive pizzeria that focuses on quality in everything we do, and in providing our customers and friends all the advice they need to select the best product for them. We pride ourselves of offering a healthy, digestible, artisan pizza and Roman Street Food. Our concept distance us from the common place take-away pizzeria that uses low-cost ingredients.

What makes Mallorca unique for vegans?

Mallorca is very cosmopolitan, which means the increasing demand for vegan options is better understood and catered for. This coupled with the ease of reaching farmers and producers directly, makes it a Vegan-friendly place

Why did you decide to create a vegan pizza menu?

We don’t like labels, and don’t like going to restaurants where they challenge you or stare at you in a negative way because you decided to have a different diet. We believe everybody should be able to enjoy good, tasty food regardless of their dietary requirements. That is why we have many full veggie based options, and we embarked in creating our own vegan cheese (the ones we bought seemed like plastic…), and a dedicated vegan menu. Clients tells us that they love the fact they can come with a mixed group of vegan and non-vegan friends and all find something delicious to warm their heart. That makes us happy!

What is your star plant-based dish and why?

Pizza is our main focus, and our Funghetta is probably the best seller dish, with sautéed mushrooms, extra virgin olive oil white truffle, almond slices and our vegan mozzarella which is made with cashew nuts as a base. However, we believe that our signature dish is one that is not easily found in the island, and outside of Rome, that has an amazing flavour: our vegan Supplì. Supplì is the quintessential Roman Street Food and during the lockdown we created a vegan Bolognese sauce to cook the rice in, then give it an oval shape, stuff it with vegan mozzarella at its centre, breaded and fry.

What is your favourite local ingredient from Italy?

Esclatasangs, for their amazing taste and texture. Mammole, a type of artichoke we have in Rome that we prepare either Roman style or Giudia.

Do you have any advice for anyone thinking to start a vegan/vegan friendly business in Mallorca?

Your personality and the values you transmit can be a great asset. With patience and perseverance, and actively listening to clients and trends, you can adapt your offer to ensure you reach the target market. Experimenting is in our opinion key.

How do you see the future of veganism in Mallorca?

The future looks positive, as more and more people see that they can actually make the move to becoming vegan without losing quality in their dining experience and in the product options.

One of your main principles is sustainability: How have you incorporated this into A GoGò Pizzabar?

We have the ambition -and the challenge- to make A Gogò as sustainable as possible. We have focused on 3 key areas: resources, premises and community

Resource is about what and where we buy, this means that we try to favour local and seasonal produce, buying cleaning material that that are ECOLABEL certified and the container reused, we asked our suppliers to reuse the boxes where the ingredients are carried to us, single use plastic is not available in our pizzeria, we only use compostable and recyclable materials.

Premises is about ensuring we have an efficient use of electricity and water and manage our waste. We use 100% green energy, we recycle our frying oil converting it into biofuel, we separate our waste for recycling.

Community is about caring for others, and supporting awareness on how to decrease your carbon footprint. We train our team on why we want to be sustainable and how they can contribute to a better world. We donate the profit of the sale of the biofuel to Save The Med, support financially the shelter AALL, allow clients to come with their own container discounting the cost of the single use recipient. And now we are starting to support a social kitchen once a month, Associació Zaqueo. These are some of the activities we undertake, and plan to implement several more.
