Fideuá de Verduras Recipe – 100% Vegan

Fideuá de Verduras (Vegetable noodles) is one of our favourite meals to cook for all the family. It’s a fast, easy and suits all kinds of tastebuds. We recently bought a gas-fulled paella pan to use in the garden which cooks for up to 15 people. Today we show you our recipe for this traditional and extremely tasty Mallorcan dish. Vegetable fideuá is similar to vegetable paella as it’s also made with local vegetables – just swap the rice for noodles and you’re ready. You can cook Fideuá in just 30 minutes, ideally on a paella cooking pan, but if not, a normal frying pan will do the trick.

Vegetable Fideuá Ingredients:

Serves 10 people

Most of these vegetables can be found in your local market, we recommend you buy local to get the most flavour and to support your community.

  • 750g fideuá (you can buy this in most supermarkets)
  • 1 onion
  • 1 red pepper
  • 1 green pepper
  • 1 carrot
  • 1 courgette
  • 250g of mushrooms
  • 2 cloves of garlic
  • 1 cup of grated natural tomato
  • 3 tablespoons of olive oil
  • 2 pinches of saffron
  • 3 pinches of salt
  • 3 pinches of paprika
  • 1L of vegetable broth (or 1L of boiling water with 2 vegetable stock cubes)

How to cook fideuá de verduras

Step 1: Heat up the pan and start chopping your vegetables into small pieces.

Step 2: Fry the garlic, onion, peppers and carrots together for 10 minutes (or until soft).

Step 3: Add the courgette and mushrooms and fry for a further 5-10 minutes.

Step 4: Add your grated tomato, paprika, saffron and salt and mix well, leave to bubble for 5 minutes.

Step 5: Create a hole in the middle of the vegetables and slowly pour in the fideuá (we find it easier by putting the fideuá into a shallow bowl first).

Step 6: Spread evenly and leave to cook for 10 minutes (it usually cooks quite quickly so keep an eye on it).

Step 7: Try a small mouthful to check if it’s cooked and season to taste.

Step 8: Enjoy your traditional Mallorquín meal!
